    Try substituting beef short ribs for the oxtail and follow the same (or similar) recipe.
    Good tip. I will try that. The stock from the Oxtail is beautiful. Love the gelatinous texture of it.

    Big fan of Oxtail, great flavor and makes superb stock (just like Brad said) so tender and soooo good.

    I see your a Floyd fan Del1r1um. Dark Side of the Moon is probably my most played album. Especially love 'Time'. I think as you get older the lyrics to it gain meaning. I think it sums up my life, and many other lives too to a tee.

    I'm waiting for my daughter to wise up and listem to pink floyd lol She has taken all my other CDs... but she aint getting the albums just yet /grrrrr

    I use neck bones for stock and toss in a few ox tails for a meatier broth Gotto love ox tails and short ribs with a beer braise ..... Mmmm gotto get the DO's out again

    The basic recipe that I tinker with is the Good Eats Beef Stew recipe. The night before, I'll usually pop in thyme and 5ish cloves of garlic, in addition to the tomato paste, vinegar, and worcestershire he calls for. The next day in the pot, potatoes and onions primarily, along with a couple bay leaves and whatever beer I happen to be drinking at the time. Always lots of pepper, too. I'm going to be trying your ox tail recipe with it soon I hope!

    I know what you mean. Nobody touches my vinyl except me. Ribs and oxtail. Now there's a good idea. Cheers
