    Your Ciabatta looks magnificent. 'Hearing your customer wanted a 'Gag in the Bag' (jack in the box) version would have been very very difficult to take. 'Not unlike my str8 shaving, in baking, I'm just a determined hobbiest, and like shaving, the grateful recipient of the kindness of others. Thank you for sharing your recipe.     I have been using an old straight for bread slashing for some time. It was an old 5/8 honed to around 4/8. Not worth working on as a shaver but the thin razor sharp blade works wonders on bread. My sour dough starter is running on 6 or so years now. Lasts a long time, you just have to use it. Bread is one of those things I dont understand why people buy at the super market. It is easy to make, tastes much better and did I mention easy to make.

    Cannonfodder. You're so right.

    I used to hate bread. Now I just hate commercial bread or commercial yeasted breads.

    The lovely bride has bought me anything I want for breadmaking, including the kitchen aid mixer, several clay baking vessels, proofing baskets, 'cause she loves the bread. Although she graciously leaves me room to not bake on any given week, she also says: 'now don't you go burning out on making bread. It would be awful hard to go back to store-bought.'

    Utopian: 'Sounds like you have the moves down already. Should you have any interest in particular kinds of recipes, it would be an honor to be of help. The cheese/olive loaves, black rye, desem, french peasant (wht/rye), garlic/blue cheese. If you recover some frozen starter, it may take 4-6 days of refreshments to come up to fighting strengh. Then take no prisoners!
