    Default Meatballs!

    So, I made these the other night---

    MagRack...TV For Whatever Turns You On

    (make sure its playing "Steve Schirripa's Hungry"--meatballs)

    They are damn fine. DAMN fine. I had similar recipe that was all fancy with three meats and such (my mom got it from Senator D'Amato's mother when she was on TV and gave it to me, so it wasn't anything to sneeze at) but this one blows it out of the water. Guess I shouldn't be too surprised that the meatball recipe from a 100 year old famous Italian restaurant is pretty much the best I've ever had. So, use it in good heath... if such can be said about a recipe involving pan frying in a half inch of olive oil...

    Those meatballs, a crispy roll, lots of sauce, and perhaps a bit of provelone...One hell of a sangweech

    I used to love meatballs when I was able to eat meat. I will still eat a good meatball once a year at our Christmas lutefisk dinner (usually the weekend before Christmas). I hope you enjoy and add your thoughts for me

    Side note: if anyone has a great turkey meatball recipe feel free to send it my way.

    Something else thats notable-- besides the cute girl-- is the pasta plate they serve has been tossed in the red sauce. I started doing that after I saw it... on the Sopranos. Ralphie was telling his nephew how to cook pasta. It makes the pasta much better. Raplhie's instructions were to drain the pasta water, melt a pat or two of butter in the pot, toss in the pasta with some red sauce a stir it around briefly on low heat. Verbatim it was more like "Put the macaroni in the pot with some gravy...."

    Funny, Pete-I started doing that with my noodles after watching that, and I guess it does make a little bit of difference. Remember another infamous scene with Ralphie cooking scrambled eggs, when Tony came over to confront him about killing their horse?

    That was when Tony beat/strangled him to death, and Sopranos fans everywhere cheered the demise of the sleazebag Ralphie Cipphoretto. I've got every episode on DVD.

    You guys are making me want some meatballs!

    Absolutely authentic and correct. The tastiest spaghetti is always under cooked, drained and then finished for a minute in the sauce. It gets the flavor in there.

    And, yes;
    It's not pasta. It's noodles.
    It's not sauce, it's gravy.

    yeah my wife is italian and i was brought up to wash the pasta in a collander after it was cooked, put it on the plate and add some sauce on top. she went nuts the first time i did that - its not the italian way apparently!!!


    doing it "properly" definately gives a MUCH better end product.


    if you havent made your own homemade pasta to go with those homemade meatball (same recipe my wife's family uses incidentally), you are missing out on some seriously good food.
