Cognac and whisky age perfectly well as long as they are in the cask. agin is chemistry involving the wood and the air. As soon as the product is in a glass bottle, aging stops.
As for what to buy:

I know the guy personally and can vouch for him. I've bought all my whisky and cognac from him for the last 10 year. He buys in person from small vintners, and makes only modest profits. You generally can't buy the exact same bottle more than once, but everything he stocks is excellent quality, and very affordable.
My last bottle of cognac was 35 years old (single cask cognac) and set me back only 60 euros or something. I can't speak highly enough of the man.
EDIT: look here for his cognac list

I'm partial to Hennessy Privilege, but that's just me. On occasion I will splurge in a bottle of Johnny Walker Blue, but not very often.
Asides from my taste, I don't save for the future. As far as I'm concerned, there's no tomorrow. Drink your best booze today, smoke your best cigar, use your best razor, put on your best shirt and tie, call your best friend... you get the idea. I'm not planning on checking out anytime soon, mind you. It's just that I don't think my replacements will enjoy the same things and hate to waste good stuff.
