So yesterday I fixed a mojo pork roast (marinated overnight in Mojo Criollo) Makes a nice citrusy sourish pork loin. I then fixed some garbanzo beans and spinach w/onions and garlic which I spooned liberally over white rice (great meal!)
Fast forward to this evening. I've created a sandwich which I have dubbed "The Redneck Media Noche." Here's how it goes: 1. Place two pieces of bread in the toaster. 2. Slices several pieces of mojo pork very thing. 3. Once the toast comes up spread some mayonaise on one slice and pile the pork roast on top of the mayonaise. 4. To top it all off a few healthy spoons full of spicy chow chow http://en.wikipedia.org/wiki/Chow-chow. The resulting sandwich although very simple, is borderline orgasmic. I think next time, some Cuban bread would be in order. So I made a couple of these sandwiches along with a heaping bowl of the aforementioned spinach and garbanzo beans over rice and I'm washing it all down with an ice cold PBR... DATS NICE..The older I get, the better I was

That's just really unfair, I love me some pork. There is nothing I like better than left over pork tenderloin, straight from the fridge. Now I feel the need to pull a loin out of the freezer to throw on the grill. Thanks for the inspiration.

sounds like good eats for me, I was at camp gettign the place ready for bear season in 2 weeks and we had pork tenderloin, scalloped potatoes, and shash atash ( corn and beans mixture with some onions and about 5 tbls for bacon grease on it for flavor all cooked together )

Awesome! Since you're doing the Cuban thing in NPR I'll do the BBQ thing in Miami! I got me a Weber Smokey Mountain that makes a slow cooked pork shoulder that I slather with home-made BBQ sauce then put on a bun with home-made horseradish cole slaw that will kick your ass and make you beg for more.. BUT...you have to bring me one of them sandwiches to get one of mine!!! Sounds like a winner! Just don't tell my mom that you put any heat on cuban food...she'll drive to your house and slap you! LOL!

I'll be cooking whole hog in a couple of weeks. Stuffed with baked cinnamon apples, wrapped in bourbon soaked burlap and buried in good old Ohio clay to slow roast for about 18 hrs. Can't wait.
