spent the better part of the day sunday watching the pressure canner cann these buggers. cut them up and put them in jars with 1 tsp of salt and a splash of home canned tomatoe juice for the acidity it helps make the meat tender. good eats if you ask me. my favoite one was the rabbit i shot off my hip, i was walking thru a patch of woods and one sprang up and i for some reason shot off my hip with the left barrel and rolled the rabbit at about 10 yrds.

Not only good eating, but good memories. I wouldn't trade any of mine with my dad or with my son doing the same thing.

Nothing better to eat on a cold winters night than fresh hassenpfeffer.

Love the old double, been wanting to snag one for a while myself. The memories you are building now are some you will cherish as you age, thanks for sharing...

I had to laugh at this one because a number of year ago I used to go to Wayne Nebraska with a friend of mine and a bunch of our friends....I mean customers to go to the Great Dane plant to take a tour and to hunt Pheasants in late October each year.

One time as we were walking through a big field of corn, I heard lots of excitement a few rows over, but no birds flushed, so I kept my eyes up front to see if they were running ahead of us. I was on the outside next to the woods and out popped a rabbit so I shot him and put him in my game pouch.

My friend met me at the end of the field and asked me and the blockers "Did anybody get that Hassenpfeffer?", and I told him no but that I shot a rabbit as it ran out of the corn. From then on I knew all about what a hassenpfeffer on the hoof was. It still tasted just exactly like a rabbit! That part is just a joke, but the story isn't

yea it took be a ong time to get a old sxs 12ga. thanks alot for the recipe and the story. i will have to try it soon. i love using canned rabbit for stew because it makes a great amount of juice in the jar that gives the stew a great flavor and it makes it easy to debone. cant wait to try a big bowl of hassenpfeffer a night. sounds filling
