Default A Lot of Sashimi grade tuna!

This is 2/3 a 30 pound piece of tuna I just got at work, its hard to tell because of my terrible phone but the quality was amazing.

I don't normally eat fish while I cut it, but I had to stop and make myself a few pieces of nigiri when I was cutting this.

We once got a piece in like that for a dinner special at a restaurant where I served. The head chef, a buddy of mine, called me back into the kitchen, cut off a good-sized hunk, and said "here, eat that". One of the best things I've ever tasted!

I was just cutting paper thin slices off a piece from the center of this slab, I could only describe it as incredibly silky. It's so fresh I could not only see my knife through it but I could clearly see the line and different colors where the high carbon meets the soft iron clad that's wrapped around it, beautiful fish to say the least.
