    The Bradley is great. Its not exactly what it advertises itself to be but its damn close. I have issues with the rate in which it heats up and the temperature it claims to be at. But I’ve found ways to work around this now that I’ve become used to its nuances. But its incredibly flexible in that it can deliver a variety of cooking options and do so with consistency. It doesn’t require the baby sitting that other smokers require and maintains an even temperature during the process. It may not be perfect for BBQ but its ideal for charcuterie.

    I like that. Smokers are not that complicated. I am the least handy person you may ever encounter so the chances that I’d make one myself is zero. But if you have the capability, the concept is easy enough to grasp. I like the fact that you made yours. Having done so, you will know what it needs and how it behaves over time. It looks as if you have a propane heating element in there. Are you able to maintain lower heat with that and still burn wood? I had a propane based unit prior to this one but could not keep the temperature low enough for items like salmon.

    I tried my hand at curing and smoking bacon. Used the Ruhlman method. So far, so good.

    Oh yes, very nice. I have a thread here about the same. If this is your first run at it, I'll advise you to next time buy big and make a lot. You'll find that it makes more sense to do 6 months or a year's worth all at once and freeze it. You'll be surprised how fast that amount of bacon is going to go. Its gratifying isn't it? To make something like that by hand?

    Makin Bacon is a passion with me,Fun,easy,cheap and as above it freezes well,I do 20 lbs at a time.
