Blade Transformation
Here is a video that str8razor shot while heat treating a blade at the 2017 North Texas Razor Meet. It is a good example of showing the change from austenite to pearlite.
This is the way I wrap my head around what is happening, not exactly scientific but a close enough analog.
When the blade is at critical temerature/austenite structure, the carbon goes in solution with iron, the crystal structure of the metal changes to a state where it can hold the carbon.
As the blade starts to cool off the most of carbon gets kicked out and the crystal structure changes. As the carbon get kicked out and the crystalline structure changes heat is released.
That is why the blade starts off hot starts to cool, then gets hot again.
