I am not a fan of cutting grooves in the working side of Nagura.. seems like a waste of precious stone.

I have been using the largest flat side and notice, particularly with Botan, that I get and occasional fleck of stone in my slurry. Makes me think there's a good chance there are smaller less noticeable pieces in my slurry. I don't see any splits cracks or obvious spots where the flecks are coming from.

So... What does the working side of your Nagura look like? Do you use the same flat all the time or vary the spot you use? Do you use a flat spot or are you more likely to go to a round or less than flat spot for making slurry?

You're going to have to take me out to dinner first!

I always use the same surface and as the stroke is made the leading edge is lifted, so the trailing edge has all the friction. When the stroke goes in the opposite direction the new leading edge is lifted so the opposite edge now has the friction. Have not had any issues with chipping or fragments coming off and I have repeatedly checked for them under the scope and simply by feel.
