Was cross-training on sushi knife - did this to Chosera 400
Holy smokes. I must have been working for it!
Managed to get it flat again, but with some effort. Actually, I think I got tendonitis in my knuckle from all of this! Something like 12 hrs of sharpening so far, and yes, the knife is a bit wonky (first try with hand-forged san mai on a larger knife.

I do but this was a first try. My Grzzly was pulling the edge down into the space between the belt and tool rest. I guess I'll have to make a jig or a board to hold the knife like the Japanese.

Thanked: 458For coarse work, a large and new medium crystolon stone will be better and faster than the 400 chosera. Coarse loose diamond on an iron plate is also a possibility, but it leaves such gigantic and deep grooves on metal.
