    The uneven grind is very common on the GD, but is also seen on German and Sheffield blades(much less though). You can hone them in a way that will even it out to some degree by putting a bit more pressure on the heel or toe where the bevel it thinner. Don't over do it though. Too much overall pressure will just make the bevel bigger on the entire blade. You can also do heel or toe forward strokes to focus more on the areas the need more attention. As long as you are able to set a bevel on the entire length of the blade, it's more of a cosmetic issue. If it's really dramatic and prevents you from setting a bevel you can either even out the spine(on your bevel setter) or add a layer of tape. Since you're learning, and it's a GD, I would recommend experimenting with both.
