    Unless the dapping block is hardened to the same level as a knife or chisel (doubtful) I wouldn't use it. The purpose of the burnishing is to wear in the stone. Softer steel won't do the job nearly as fast, if at all.

    OK- I am sure it is cheap steel- I will use one of my older kitchen chef's knives.

    The is a good point that I had not considered. I would hope that the dapping block is hardened given the way it is used.
