I sharpen all my knives free-handed.
I did buy a tormek t7, and an edge-pro system, but in the end, I still use a free-hand approach much for the same reason as I shave with a straight, total control of the job.
It does take some practice though, but that's half the fun, isn't it?Bjoernar
Um, all of them, any of them that have been in front of me over all these years....

Thanks mate
In the words of Crocodile Dundee; a walkabout..
Glad to be back though.
While I haven't been around here much these last couple of years, I've kept up with my hobby of sharpening and using straights
Hopefully I can find more time to hang out here again.
I've missed you guys!Bjoernar

Thanked: 459Me, too on the tormek, except I had a supergrind. I replaced it with a 1x42 kalamazoo grinder and a dry baldor grinder (the latter is not for knives, but woodworking tools and refreshing kamisori hollows).
I still like the IM 313 setup, including for grinding.
The tormek is as nice machine, but I didn't like its speed and gave it to a friend who likes those kinds of things.
The only except for me for knife sharpening is that if someone in the neighborhood brings me serrated knives, I will use a stiff polishing compound (an al-ox compound that has a lot of al-ox in it) and a hard cotton buffing wheel. It smooths the serrations a little bit, but removes wear. Serrated knives are on borrowed time, anyway.
