Hmmmm, how do I say this? If I had your hones I would use the DMT to remove nicks and old oxidized steel along the edge. Then I would follow that with the Naniwa 1000 to smooth out the damage that the DMT has done. I would never expect the edge from either the Naniwa 1000 or the Norton 1000 to feel as "grippy" as the DMT edge. IMHO the DMT edge is slightly damaged by the harshness of the DMT.
IMHO the bevel is started by the 1000 grit but is actually "set" (developed, formed) by the 4000 grit hone.
