    With all the discussion, I think I'm making progress with a decision. Another question I have deals with bread knifing. Name:  bread knife.jpg

    The blade looks like it kneads (bahaha pun) to be bread knifed (good one, right?). It doesn't look like it would take much to fix, but what grit stone would I need to fix it?

    I think you would be better off taping the spine and concentrating on bringing the heel down some while honing in the normal manner. IOW, with the taped spine laying on the hone, as you normally would. Just focus on the area that needs the metal removed. Breadknifing is the nuclear option IME. Causes as many problems as it solves. IMHO.
