I once worked in an Industrial Kitchen cooking for the airlines think Detroit Metro airport. management wouldnt allow us to sharpen their knives. All the people from other countries were constantly flipping over cups,plates,saucers you name it to sharpen dull blades. I even learned to file my fingernails on the concrete in jail. It worked when no other options existed.
Outside of those conditions I prefer hone stones. Your blade your face, choose your stone accordingly.Your only as good as your last hone job.
