I use a worn 325 diamond plate. I usually lap it every couple of minutes if I'm restoring a bevel. No need for grids or anything crazy just a few strokes with the plate and back at it. I feel about triples it's cutting speed when compared to not constantly lapping. With this blade in particular I would get the bevels to meet then lightly run the edge on the corner of the hone 2 or 3 times then set the bevel again just to make sure you got all the chips and weak steel from the years of no use and the aggressive nature of the diamond plate.

What grit DMT, do you have?
Lap the 1200, sounds like it is either not fully lapped or the edges are not beveled or rounded. I do not see any beveling or rounding of the stone edges from the photos. Honing on a low grit DMT may cause you more issues down the road, but it is done so don’t sweat it…
Finish setting the bevel on the 1200, after you lap it again and fully. It should set the bevel just fine. As said if the razor is hollow ground and you use too much pressure, you can lift the edge off the stone and not hone to the edge at all.
