    I bet you could get some beautiful sashimi and cold smoke salmon cuts. Partially frozen and the blade just taking off the finest of pieces, leaving them translucent they would be so thin. I think you need to get that honed up for the kitchen.

    Just send it over here, and I'll put it on the microtome hone for you. Of course, I WILL shave with it before I return it to you for sushi making.
