Not sure what causes it but be very careful you don't get larger broken particles in the mix which will chip your blade in an instant. Make sure the cleaning stones edges are all chamfered & watch your pressure when slurrying. I find a diamond plate more consistent.

When I honed professionally my standard was to hone optimally for people with sensitive skin. That taught me a lot about steel , razors & honing them. It also retained 100% of my clientele rather than providing a 6 k etc standard for a smaller group of shavers who could tolerate the edge.
