I’d have to disagree that if it works for one that it will work for all. The easiest example is a stainless or semi-stainless, wear-resistant steel, like SLD or ZDP. I have a 7“ Yoshikane SLD slicer, and if you’re using Naniwa SS, you’re going to be rubbing steel a long time. If you’re using a Shapton Glass HR, no problem, the HR Glass was designed to cut the cryogenic stainless Lie Nielsen A2 plane steel, so the right tool for the job is always the right decision. As far as jnats go, i can put this knife on two different stones, one will cut the SLD and the other just seems to burnish and round the edge.
I was on my third jnat finisher before I found one that my ice-hardened Sub Ceros liked, same for the Puma Inox frozen steel. Some hones work better than others on certain steels, both synthetic and natural.My doorstop is a Nakayama

I was mainly talking about razors. I've honed a bunch of Inox razors on coticules. Apart from a bit more time on the honed (nothing insane), I didn't notice any significant difference.
But that is just my experience, it's hard to make generalisations that hold water in all cases.
