I haven't used that hone but a lot of hones come through my shop. Use magnification to see what the blade looks like and then do 20 or so passes on both sides of the razor and see what the difference is or isn't. There isn't widespread adherence to grit sizes so an 8k on one stone isn't like an 8k on another stone. The most obvious example of that is the Norton 8k vs the Coticule. The Norton is way coarser. So . . . take a dull razor, sharpen it on the 3k and then the 8k side and see what you've got for a shave after stropping. The only real test is in the shave on your face.

I'd love to let someone with more experience try the Henckels and see how it compares to other hones, but the cost and risk of shipping makes that impractical.
All I can say is the light 8-10 laps (on the 8k side) definitely sharpened the blade. It also produced some grey matter on the othewise cream-coloured hone.
I hope the Wapi's in the mail tomorrow so I can try out the hone more extensively.
