I been reading about putting a strip of tape on the spine to set the cutting edge on a razor creating a beveled edge.
This seems like it defeats the purpose of the spine's job to set the bevel of the edge????
I'm new at all this honeing stuff and wondered if I'm missing something here.

Defeating the purpose is a bit harsh. Lots of folks double bevel on wedges, razors with worked spines, or to finish with super fine hones (or pastes) and works just fine.
Even with 2-3 layers of tape, you aren't changing the angle of the bevel very much. The only problem is, you have to remember if you taped it (and how much) the next time you hone.

Mostly, the tape isn't for a double bevel (although I recall Tim Zowada does this and goes from 1 piece to three to set a final micro bevel), but the tape is used from the start while honing and is there only to protect the spine from excessive wear.
