Rather than continiously bread knife in a fixed location I use the full surface of the hone.
Back and forth with a side slip than prevents the edge from wearing along the same path.
I think such treatment is a good practice especially when preparing for restoration work. The blunted edge is far less dangerous and far less prone to chipping.
