    THE SPINE MAY HAVE BEEN TAPED ON THE ORIGINAL HONING AND IF SO YOU WILL HAVE TO TAPE AGAIN OR SET A NEW BEVEL

    Sorry to be a pain, but when you say the bevel was set professionally, do you mean by a honemeister or a knife shop?

    If you are doing the marker test and it is showing that the edge is not coming in contact with the hone over the full length is it at the heel and point or elsewhere ? If it is a smiling blade Lynn's suggestion of heel leading with the blade at a 45 has worked very well for me. In extreme cases of radical smiles or warped spines the rolling x is also an option.
