DMT says that the interrupted surface is a bit more aggressive. I haven't noticed much difference. The "holes" are said to help minimize swarf buildup. The red one in my current avatar is over 22 years old and well used. It's also been carried in my back pocket for all that time; very durable.
I have both types (7 w "polka-dots", 4 without). For razors, I think either type works fine.
