    What technique do you recommend for setting the bevel?

    Did you check the edge under the loupe after shaving. If it was a corroded & rough originally it may be degrading as you shave.
    Maybe more steel removal if that's the case.

    The slight smiling profile on my KeenKutter dictates that I hone with a slight rolling X pattern. Seems to work for me. I don't know what your blade looks like so I can't comment as to what you should do to hone it properly.
