Lefty needing some knives.
So I am looking for a left handed set of japanese kitchen knives. I have a set of right handed but I hate having to change my cutting technique just because they are right handed. I want a set of the single bevel like yanagiba and deba and Takobiki and Usuba... basically the whole set but in left handed. Any body know where I can find a set besides some of the super high priced ones.

Unfortunately, high prices seem to come with the territory, especially for the quality knives. Maksim (Japanese Natural Stones - Search Results for "left handed") has a few lefties but, again, they're fairly high dollar goodies.

Well you know what sucks is that the really only hard part I have is sharpening the wide bevel properly. If I do it with my left hand on the right handed knives with the edge facing away from me I tend to roll the bevel or it feels like its catching and if I do it right handed like you should...well I feel really retarded doing it. Of course I do have problems with the actually cutting when it comes to filleting for sushi and sashimi. I will probably end up having to shell out some nice cash I guess

You are investing in quality tools that will last several lifetimes with reasonable care. Besides, you gain the intangibles of the enjoyment of using great tools as well as the pride of ownership.

Perhaps Knivesandtools ships internationally from the UK: Kitchen Knives, Sharpening Stones,Binoculars, LED Torches and more. They carry Eden, their house brand, which are supposed to be very good but reasonably priced, around 80 euros for the chef's knife. And they have lefties, but you'd have to ask them if they are single-beveled or only have left- and right-handed handles. Sorry I'm so vague, but it's all the info I have for you, and Knivesandtools has a good reputation here
