Sushi and Sushi Knife
So my daughters have developed a taste of sushi. Obviously, the next step for any of the kind of people that shave with a straight razor is to learn how to make it yourself.
But wait - isn't there a knife involved? Why yes! There is a knife involved. And since it's a Japanese knife, mustn't it be incredibly difficult to make and hone? Why of course it's difficult to make and hone!

I remember this guy. I make sushi myself and wouldn't mind his knives. I have a sushi set from Mundial. They're good but not great. Atleast theres no spoons involved
3 things that I have found indispensable for making sushi. Fresh fish, sharp knives and saran wrap. I treat the knives like I do my razors. Taking them all the way up to a cuticle. Maybe a little too much but the cuts are so easy.

I have watched quite a bit of his stuff and do believe he's a very good knife maker...but it stops there. I would love a big ole wet grinding wheel like he has!
