Thread: recommended kitchen knives?

I spent a few days with a cheap knife, a black marker pen & a 1K stone. Taught me a lot. Thought I was doing great until I realised I was covering about 75% of the edge with a forward stroke and the remaining 25% with the backward stroke, things have since evened out and going back and forth is only part of the arsenal.

As mentioned use diamonds.
A short while ago I ran accross a ceramic blade at Target. Not high dollar or "quality" maybe as are mentioned here but i thought it was one I could afford and play with. My wife was mad 2 days later when I got out the hones and started playing with it. I did get it sharper.

Having worked many jobs during my lifetime. I was fortunate enough to cook professionaly in the mid to late 70's. French cuisine to be specific, as a saucier. I used many knives during my 5 to 6 years stint... I bought a Ken Onion Shun Chefs Knife just a few years back and absolutely love this knife. I highly recommend the line of Shun Knives.
I also really would like to pick up a Bob Kramer Shun Chefs Knife. It's a thing of beauty...
