Great choice with the Naniwa set, but reserve them all for straight razors only.
You will damage them by sharpening large knives. They have a tendency to damage the hone edges. Smaller curved ones will wear them where you want your hone very flat.
You can get a King 1000 grit waterstone for a little under $30 on the Bay and it is capable of doing great things for your kitchen cutlery.

Amazon.com: Dovo "Special" Imitation Tortoiseshell, Full Hollow Carbon Steel, 5/8": Health & Personal Care

it was a better price than I've seen for that particular razor anywhere... now to look for a display box... lol

Hi and welcome. Just make sure that you get the razor pro honed as the factory edge won't be shave ready. Good luck and any questions feel free to ask

I've read some reviews that just stropping is necessary with a new dovo. I'm just curious because I don't know better, but is that a matter of personal preference, or is it definitively necessary to have it honed first?

Be sure it is professionally honed at first and don't strop it for the first shave. That way you know what shave ready feels like. I also picked up some great starter razor on the classifieds here. One more thing! I have a thick beard and have had better luck with wider and thicker blade razors. I tried a 5/8 full hollow and my whiskers just laughed at the razor and said, "that tickles!"

That quote to strop and shave is what is said by the factory. Rarely is it the case. Get the razor honed.
