Absolutely, pick our brains! That's what this site is about.
A hollow grind is one in which a lot of metal has been removed between the edge and the spine. Imagine making a spoon from a solid piece of metal--you'd have to grind out a lot of metal to make the bowl of the spoon. On the razor, of course, an equal amount of metal is ground from both sides of the blade.
This leaves the blade very thin where it touches your face, and allows it to be more flexible. It also makes a little more noise as it shaves hairs, because it's easier to make that thin metal vibrate, or resonate, or whatever exactly it does.
The other extreme is a wedge grind, in which only a little bit of metal is ground away between the spine and the edge. It would be like a very shallow spoon. This thicker blade does not flex as you shave with it, and cuts hairs more quietly.
Most people agree that wedge grinds are easier for beginners to shave with, and some point out that because most professional barbers use hollow grinds, hollow grinds must have proven themselves as better shavers overall.
I learned on a hollow grind, but slightly prefer wedgier grinds. There are intermediate grinds--half hollow, quarter hollow--that are heavier and stiffer than full hollows.
A full wedge is harder to hone, because you have to remove more metal. Any degree of hollowness greatly reduces the amount of metal you remove during honing, because there is just empty space in the straight line between the spine and the edge. Only a little bit of the spine and the very edge touch the hone, and the process is much faster. That might be another reason barbers prefer hollow grinds, because they're paid to shave, not to hone.
