    John at Lone Star Artisans does some great work. I have his end grain cherry, "The Chester". It's a joy to have, and use!

    Nice!!!! Its made from AEB-L which is stainless, takes a FINE, stable edge and is not problematic when it comes to sharpening like some "super stainless" No reason not to use it.
