Thanked: 4207As promised and sorry for the delay Andrew. Wife kept forgetting to send this to me.
This is an excerpt from the Harbinson personal cook book. It's a little book that contains all the family favorites going back 100 years. Things like fadge; (irish potato bread), monkey bread etc are all in there. As Colin said, brown bananas are best. Ruth tosses em in the freezer when they go spotty, just to have for the bread.
Like I mentioned up top, Ruth bakes it a little sad, or under done. Can't go wrong experimenting though. Make it your own.

I'll get my wife's recipe, it uses sour cream and pineapple chunks, but if you insist like I do, the pineapple can be left out.
Oh and a nice bit of salami between 2 slices of banana bread is really good.

Add in a habeneros to Mike's recipe and it will be quite stimulating and further warming, of course.

1/2 cup melted butter
1 cup white sugar
2 eggs
1 tsp vanilla extract
1 1/2 cups all purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 cup sour cream
1/2 cup chopped walnuts (optional)
2 medium ripe bananas, sliced
1 small can pineapple tidbits, drained (optional)
pre heat oven to 350 f, 175 c and grease a 9 x 5 loaf pan
in large bowl mix butter and sugar, add eggs and vanilla and mix well. combine flour baking soda and salt and stir into butter mixture until smooth. Fold in sour cream, bananas and optional ingredients. Spread into prepared loaf pan.
Bake for 60 minutes or until a toothpick inserted in center of the loaf comes out clean. Cool loaf 10 minutes before removing from pan and place on wire rack to cool completely.

Here you go!
2 eggs
1 cup milk
3/4 cup packed dark brown sugar
1/3 tb vanilla extract
1/3 tb rum flavor
1 1/2 cup flour
1 tb baking powder
1 tsp oil
1-2 ripe bananas mashed
mix all together and gook on griddle.
We eat them with just maple syrup but you could slice bananas on top and make a simple brown sugar syrup as well.
