    We have/had a member who (I'm pretty positive) owns/owned a meadery.

It may sound technical the first time you read it but any home brew store would have everything you need.
I,m interested, just seen the recipes ultrasound guy listed, the cherry and blackberry sound great, and I do have a large supply of honey, my daughter and husband always more than they can give away so this would be another use for it. Tc. Thanks

Dang set me aside a couple of quarts of "raw". I will be down for it once the weather breaks. Paying $10 for a pint of it in grocery store. Walmart cuts theirs with corn syrup. Back to the post

Yeast cant eat all that honey. add fruit at the end of a boil so that flavors stay. pits and seeds boiled too long add to bitter notes. You will also get the florals from what kind of flowers the bees pollinated. Or you can just get buzzed.

Magpie you have a Meadery?? Get together at your place, might end up with some wonky bevels . I am in.

Man sometimes they bring it to church just to find a home for it,, used to use more when the grandsons were younger,, one had a condition that honey was good for plus it was some of their 4h projects, plus we love the stuff,, my daughter has never sold any , she just said likes to give it away,, I just called her to let her know I'll be needing more than normal, I,m going to try the cherry and the blackberry, the cherry I,m just going to use store bought frozen cherries , but the blackberries we have at the farm,, too many at the farm so another use. Tc

I,m sorry brother, in our neck of the woods it's a curse, the family and friends can't eat up all the honey and blackberries and the wife don't can the berries any more. And I would gladly give you some goods in exchange for honing! It ain't nothing but an 9 hour drive! Blackberries are at there peak in Mo. Around July and the honey well let's just say it he little buggers keep doing it when the weather is right. But I bet I could send you some when we start gathering the honey. Faile85. I appreciate the link , and I,m sure I'll have more questions so do t run away before I get set up !! Tc

Wow, this all sounds delicious and is making me thirsty... I'm a big fan of honey, we have some good local stuff around here. Can get real pricey. Although I will gladly pay out the nose for buckwheat honey or as I like to call it "Natural Black Tar Heroin." Tastes like pancakes to me and is a bit on the crystalline side.

Not everyone likes buckwheat honey and it makes a very...interesting...mead lol. Tupelo honey makes pretty good mead but it has very subtle flavors that are easy to obliterate. I usually stick with orange blossom if I'm doing a fruit flavor myself and I did make an awesome batch of dandelion mead with some raw wildflower honey and homemade delandelion syrup.

It was great after a year, but divine after 4. Had I known, I would have been more stingy early on. I have another batch that I made with 30 lb of honey (has to be added in stages to not kill the yeast), it took 4 years of aging to come into its own. It's now 6 years old and getting better all the time.
Have you ever tried a "burnt" mead? It's on my list to try making but I can't really bring myself to cook perfectly good honey till almost black. It sounds awesome but I'm definitely making a 1 GAL test batch first.
