    Default Sous vide mashed potato's ...

    Hey guys,

    Yesterday ( Thanksgiving day) my brother prepared most of the meal using his sous vide cooking setup. I have to say it makes some pretty good food!
    I will focus on just the potato's for now. He sliced up some tubers and placed them in a plastic bag along with some milk, garlic cloves, butter and sprigs of rosemary. He then pulled a vacuum on the bag and heat sealed it. The next step was to pace it in the temp controlled water bath for some amount of time. When they were finished cooking we drained the tubers , removed the rosemary sprigs and I then used an old fashioned manual ricer followed by adding back some of the liquid and proceeded to stir to make the mashed potato's.
    Boy were they tasty!

    But the best part was just a few minutes ago. I brought out the cast iron fry pan, gently heated it up and sauteed some garlic, onion, black pepper and chipotle powder. Then I put some asparagus on top for a few minutes followed by about 2 cup's of the mashed potato's and gravy. This was topped with reggiano cheese and a few dabs of butter.

    This was the best darned leftover tater's I have had in a long time

    You go describing a meal like this with no photos , not even a dang messy plate !!
