Started the new year not wanting beef, or bird, so went with a pork dish based on bacon last night.

Pork belly filled with seasonings and rolled up fat out. Cooked at 400 for 90 minutes, tented with foil, then up to425 for 30 minutes to turn the bark into candy.

I used to fix a dinner but I've found that this way everyone can come and go as they please. My youngest daughter wasn't feeling well so she and the two kids didn't come so I'll be taking leftover to her.
I made a command decision before Crimbo.
I dont take my sugar in the morning or weigh myself until either the tree comes down or the goodies run out.
Problem is I opened a bottle of Southern Comfort Christmas Eve and I'm finishing the last of it right now, tomorrow we're shopping so another bottle is already on list ;)

Yea, they were called Red Skins, not PC today I reckon. However you could get some without the red dye.
Once during the winter I bought some red ones and wanted a snack on the way home. I turned the heat up and cracked the window a little so I could spit the shells out.
The next day I relaised that that was not the best choice.
The roof of my cab by the window looked like it was covered in blood splatter. :rofl2:

As I've said in another thread, family packs and whole chickens were on sale for $0.97 per lb. I'm figuring on fixing some enchiladas tonight so I picked up a couple of whole birds.
Back in the day if you had a 3 1/2 lb bird you had a big bird, today's was almost 6 1/2 lbs. I used a method to cook the bird that uses boiling water. You have to use a large amount of water for this. I used a 5 gallon kettle.
You let the bird warm up for about an hour, while it's warming you start the water to boil. Here's the bird ready to hit the hot water.

You insert a long handles tool inside of the bird to place it in the boiling water. Once the water stops boiling you remove the bird. Here it is.

The boiling water kinda of sears the bird. Then you return the water to a full rolling boil then put the bird back in the water. Once it come up to a boil you put the lid on, shut off the heat and let it set.
Now back to the old days, you'd let the bird sit in the hot water for an hour, but I knew that it would take longer since the bird was larger.
I let it rest for an hour and a half and then checked the temp.

I de-boned most of the bird, then I cut it into some small pieces. I used a bit of the breast but most of the breast is still whole. I'll vacuum pack it and freeze it for later. As I've said I don't prefer the breast but these are really nice and juicy.
Now to make the enchiladas :y
I will start this with I never was hungry when I was young.
BUT I will never eat boiled/pressure cooked chicken unless I have to.
One exeption would be if you or someone invited me to their house for diner.....
Many years ago when my best friend (Carl) graduated from the U of Washington with a degree in mechanical engineering, he sent out his resume. He only got one reply along with the ticket. He took the job and was there until his retirement.
A guy at work took him under his wing and had him over every Sunday for dinner. Every Sunday there was some kind of a chicken dish. This went on for a couple of years.
Carl was at a company function and someone offered him some chicken. He turned it down saying that 'He didn't prefer chicken'. His friends wife was standing behind him and heard the entire conversation.
She slapped him on the back and when he turned around she said: "What do you mean you don't like chicken? I've been feeding you chicken every week for over two years)!
He sheepishly replied: "I didn't say that I didn't like chicken I said that I didn't prefer chicken.
To this day, when he come to visit, I make a point to make him some chicken.:rofl2:

Alas no pic. But I made a lasagne for last night's dinner and served it with a nice side salad.
My lasagne has had the thumbs up from the Italian bloke in my office, not as good as his wife's or his mum's obviously but I'll take the kudos.

Last night I made some black pudding fritters and steak with roast potatoes.
Also made up a peppercorn sauce.
Was grand.
I am thinking of this year doing at least 8 lbs. and sharing with my freinds!
As a basic recipe we use 2 cups of leaves chopped and lightly pressed with a lb of butter with a tsp of lime juice and a little black pepper.
The basic recipe isn't a secret so what do you do?
If you use salt butter there is no reason to add more and with myself I add verry liitl if any salt tand then add to taste after it is done.

Fresh Grilled Salmon...with the real deal Caesar Salad...egg,anchovies, Dijon mustard ,red wine vinegar, roasted Gaahlick, extra virgin olive oil,Parmesan cheese...and sourdough croutons.
Mother's Day dinner:
Chicken parmagiana made from scratch; everything...well, I didn't milk the cows or sheep or raise the chickens, nor did I grow the green beans and almonds or raise the wheat for the pasta but I did make the sauce, the bread crumbs.

It sounds bad to say it this way but I took this from a recipe from Carmine's in Manhattan which is fabulous....but mine is better. I would put this parmigiana up in a contest against any five star restaurant anywhere in the world.
