    Default What's Cooking?

    I thought I'd open a thread that expands on the 'Who Bakes Bread' the 'Just wanted to share tonight's dinner with you guys' and 'The Breakfast Car is Open' as we don't always fix just bread or have a meal to show.

    I'll open with a cake I made today.

    I started with a boxed Spice Cake that I weighed and then measured out half as I only wanted a single round cake.

    I used commercial apple juice instead of water and since to make the entire mix required 3 whole eggs I used 1 whole egg and 1 egg yolk and 1/4 cup of oil.

    I peeled and sliced a Pink Lady apple then used some of the apple juice along with some butter, cinnamon and some brown sugar along with a bit of nutmeg to simmer the slices until barely tender then removed them from the liquid and then reduced the liquid until it was a medium syrup.

    I cut a piece of parchment paper to fit, then buttered the pan, installed the paper then buttered the top of it and proceeded.

    It was good! But I think a bit of whipped cream or cool whip would make it the cat's meow.

    Why do you do this to us?

    I just woke up and am nursing my first cup of coffee and have to see that!!

    Makes my breakfast toast seem so disappointing.

    Stopped by my buddy's house yesterday to find him baking a fresh pumpkin pie after a few loaves of his bread. All from fresh pumpkins picked last October. Sounds like I have not had real pumpkin pie in ages, so I told him to save me a sliver of a slice for the next pie he bakes and does not give away (not sure if that ever happens with him tho).

    From a story he related, pumpkin pies made from fresh versus a canned product or similar are wholly opposite things. Someone who may find pumpkin pie disgusting may not have had a real, freshly made pumpkin pie that does not make use of a pre-made, crap filling.

    Of course, I guess this applies to most anything. Fresh and natural beats fake and overly processed every time.
