OCDshaver posted the above link and once I followed it I found a rather intriguing recipe for 'French' Apple Pie.
Well I didn't have any apples but I had an abundance of canned peaches to I improvised and came up with this:

I learned A LOT! First I made way too much peach filling. I turned the left overs into a kind of 'Compote' for pancakes, waffles or even on vanilla ice cream
Second I used too much thickener, I'd prefer to have a little bit of 'juice' coming out.
Third, I made the crust too thick.
Fourth, I baked it too long.
Between #'s 3 and 4 the crust wasn't tender and I love a tender crust. (with the amount of butter in the flour mixture it should have been very tender).
All and All, not bad for my first attempt!
