Zucchini store bought, too hot to grow it in the garden right now, zuke plants all died off in July. Tomatoes, peppers, and herbs from the garden, canned last year. Dressing is just store bought generic stove top, with garden sage and rosemary. Quail cooked by my usual method for quail and dove... split, marinated in port and Slap Ya Mama, then sprinkled with brown sugar and baked at 400 for 25 minutes, foil over the legs for the first 10 minutes so the legs don't get dried out. Nice and juicy, and pan juices made a very nice gravy. Sometimes I grill them on the bbq over pecan or hickory or mesquite when I can get it. Been too rainy for cooking outside so used the oven.
Bait.

Baked stuffed manicotti: stuffed with ricotta, romano and mozarella cheeses and sprinkled with Italian sausage, drowned in marinara and topped with more mozzeralla and romano.

Washed down with Guinness.
I?m still full 16 hours later hehe.
Over the last week weve been holidaying in a place called Aberfoyle, so we stopped as we usually do at the local butcher. Got some oxtail. Not something we see often enough.
Seared it, browned off onion and carrot and simmered in tomato and red wine sauce.
Served up with some fondant potatoes.

I love a good Jamaican oxtail stew. There was a Jamaican place here in town that made a great version. Health dept. shut them down which worries me a bit. I ate their curried goat quite often.
