I tried a glass of Laohriaig Quarter Cask today. That's a powerful drink. My first impression was how much it was like the 10 year old but different-very medicinal and tingly. Subtle flavors were kind of masked by the smoke. I think this is a drink I'll let sit in the glass for a good ten minutes the next time I try it.

Handles water quite easily. I give it a teaspoon to calm it down a bit, but it's also good on its own mixed in the mouth a few seconds with saliva.

Thought I'd give this 50ml bottle of Bowmore 12 a try. Kinda like these little bottles, you can get a couple 3/4 sized drams from them.

This ones peaty and smokey, but not like most of the other Islay whiskies. This ones a little more mellow with lots of sweetness coming through. I like it a lot.

A friend recommended that you should let a sample glass sit (covered) for about a minute for every year of aging, so 10 minutes for a 10 yr old should be about right.

After a couple years of venturing into Japanese and Scottish whiskies, I wanted try something different. I have been fascinated with the effects of different woods on wine/port and whisky. Single malts/grains/blends aged in old sherry or port barrels got me going on the wood side of whisky.

I started looking into the bourbon trail, Jim Beam only thing I have tried, also put it in pecan pie. I ran across Jefferson’s Wood Experiment Collection. What better way to start the crawl. Har… I got an unnumbered box set and loved it. Wanted more. It took me a few months to hunt down the different box sets. They put out a box set #1 and #2 plus a no number box set. Of the 13 experiments, they seemed to have only boxed 11 of them. I cannot find bottles #7 and #8. Dawn (wife) and I started sipping these one after another, from one end to the other. A delightful tasting experience. Something like Jim Beam on steroids.

The inspiration behind Jefferson’s Wood Experiment Collection came from Trey spending time in a wine cooperage in Missouri. Wine cooperages are different than what you find in Kentucky as they have different treating processes, which focus more on toasting, slow cooking, and searing to bring different flavors to the forefront. It was at this point we asked, “How could we change up what the final flavors of the bourbon are after we mature it in typical bourbon barrels?” Trey started by putting 4 year old bourbon that had been aged in new charred white oak barrels, and finished it in 13 different environments/vessels. There were so many combinations to experiment with – new bourbon barrels, new wine barrels, wine barrel heads on a new bourbon barrel, insert oak staves that have been seared, or oak cubes that have been slow cooked, etc. Over a period of 32 months, we charted the characteristics of each experiment monthly and analyzed how the different treatments have affected the outcome of the final whiskey.

We decided to bottle them up in five 200 milliliter experiments so you can try five different experiments and see for yourself how these small changes make a vast difference.

Purchased this bottle many, many years ago. It was purchased with celebrating my first Grandchild’s birth in mind. My first Grand Child was born on 7/31 but the entire family was not together until Thanksgiving. The following night she was named in a religious ceremony with the family and some close friends at hand. Following I raised a glass (my grandfathers ) with her father.
I’m not sure it was so good due to the taste of the Scotch or the occasion. Either way, it was enjoyed.

Not to Ontario. I tried to get one of their Advent Calendars. As soon as I entered my address, up pops a window with an apology saying that they do not ship to my jurisdiction. Ontario Law requires any alcohol coming in from our of Province, even to a private individual, to be shipped to "the LCBO, c/o ___________". They will then add a "mark-up" to your purchase so that, even though it might be something they do not sell, something that they incurred NO expense in bringing into the Province, they will STILL take a cut of the proceeds.
