A good octane to start the morning@
Having some Indonesian Bali Blue moon coffee that is fresh roasted from green beans this morning, French Press of course.
The problem with these roasters is over time they lose their effectiveness, thank you for your service.

PS.
Simply put,
If your brew is sour..the temperature of the water is too low.
If your brew is bitter.. The temperature of your water is too high.
Roasting does some of the cooking of the beans.Darker beans take cooler water..~198F or so to try.
Lighter beans require more heat to brew and so 200F-203F is a good start.
I have had tolerance built up for many decades of drinking coffee, I miss my own roasted beans, I am out of town for another 10 days. Withdrawals here!
I know that pain, finally broke down and ordered a whirly pop and beans. The thing i have noticed here in Korea, they don't sell a lot of whole bean coffee. The stores carry a lot of instant but not actual coffee. But, there are TONS of coffee shops, most of which are really good and very well priced.
