What do you mean by defined shoulders? Do you mean double stabilizers as in a full hollow grind. If so I would be suspicious of a regrind. I do not believe the double stabilizer grind started to show up until the mid 1870's but I have never seen a definitive date. Not that that is a bad thing just it may not be as it left the factory. Many blades were reground. It was all part of the cutlery business.
Yes it appears to have double stabilisers, a quick search on the bay should produce it, you'll see what I mean.
