I mean, I'm new, don't know hardly anything about honing, and I know more then this guy.

As you said yourself, you're new (nothing wrong about that) and currently you are critisizing somebody who, I presume, does that for a living and has no chance to counter your argument.
In fairness' sake, I for one would like to hear specifics of your conversation and how do you feel "doesn't know jack" to draw my own conclusions.
I'd also like to know whether you actually tested his edges and to what did you compare it with.
Even if he doesn't hone according to prevalent guidelines of SRP, doesn't mean he can't get a mean edge on a blade.

Perhaps you could give us some insight as to what the problem is. It would then be possible to form a more balanced judgement as to whether it's the blade or the way you are shaving with it.
