I own both the new "Edelweiss" and the "King Cutter" and the only difference I can see in them is in the blade etching and the scales: the "Edelweiss" is white bone and the "King Cutter" black plastic. I dare say we are looking at the same quality blade.
I assume the white bone scales will change some color. Obviously one must take care of the scales. Be careful oiling the blade, because excessive oil can seep into the bone in the scales. It has happened to me with other razors with bone scales. I have not had my "Edelweiss" that long, so I can't offer a firm opinion on what will happen to the scales cosmetically. I can only assume they will become richer in color, like meerschaum. Or not.

I have the dovo silversteel 5/8 ebony scales and it came shave ready out of the box. I consider it good quality, the blade opens smoothly and holds its position niceley. Ergonomics are nice, I get a good purchase on the tang and the shaft with enough room to manipulate it. Edge is nice and straight and I can already feel the differences when I do different kinds of stropping. The graphics/etching on it are nice and gives it a nice quality look. The metal polishes easily and you will get a good shiny finish.
But my references are knives mostly and I am less than a month in this game. My other newly acquired thiers-issard silverwing, beautiful. It has a finer blade (singing razor) than the dovo and the dovo feels a littlebit stronger. The TI is definitely a 'finer' razor. But the dovo is a proud beast in my collection :)
I'd take the Eidelweiss in a heartbeat and in general any Boker over any Dovo. No real operational basis for that (I don't now, nor have I ever owned a Dovo) but I can tell you Bokers are the poop bar none.
The English Shaving Company made me an offer I couldn't refuse. Ordered a Edwin Jagger (Dovo), ebony handle. Decided not to go with the Boker bone handle because I was afraid of oil seeping into the bone since I oil my blades after every use. Should a Boker with the black handle come up on sale, you can count me in.

I have always liked the English Shaving Company for their products and excellent service and have ordered a big supply of goodies from them.
I don't know, however, whether they hone their razors in-house before sending them out. A factory edge on your Dovo might be enough for your type of beard. If not, you might need to have the razor honed professionally. Let's wait and see. A good choice on your razor from a fine company. Congratulations.
