I hone with 1 layer of tape on all my blades. No issues here. And keeping the spine and bevel on the stone at all times is fact. But you can shift the weight a bit to the edge and from the spine. This also depends on the grind of the razor. I wouldn't do it on a 8/8 Fili.

Since my interest is almost purely for 150+ year old razors, I tape everything and regularly hone razors where the contact points between spine and edge are A) extremely narrow and B) eccentrically offset.

It's not at all uncommon for me to hone razors where the length of spine & edge touching the hone is less than 1/8th of an inch, or that needs to be tilted in some way. With practice, these take as good an edge as anything, but you do have to learn how to burn through weird bevel offsets quickly.

Essentially, all is fair in love, war, and bevel setting. Especially bevel setting.
