Seriously, to the OP, practice away on it. If you bake bread or know someone who does, it's really nice for slashing the tops of loaves before putting them in the oven.
That Genco steel is good stuff, but harder than almost any other steel you'll encounter, so that kind of skews it as a learning experience.
