I'll tell you what I do: if after a test shave I ain't happy with the edge I give it anouter 10-15 on coticule, Thuringian, Escher or Hohenzollern and then 50 on the Nakayama. Then test shave again...

How do you strop? You should not create a 2nd bevel with a strop unless you keep it very slack or you lift the spine.
BTW re-examining the pix in the OP I do not see second bevels. The other... -

Looking at your pix again I just wonder: how much pressure do you use when you hone? If you have deep scratches it might be you use too much pressure.

OK guys, bevel studies are very interesting. I really would like to know how the edges studied shave. It's not the looks but the feel that counts.
