Yes, use water. A Zeepk would do this task nicely. :) Keep the spine flat and just grind away like you're taking out a 1/2" chip. :D

You need to break it in a bit, or it may chip up your edges initially. Get an old razor or an old chisel, or just about anything big, flat and steel, and rub the hone with it for a while. Then do...
