You cant avoid that, only thing that will keep the contours is a belt grinder. As far as I know the set ups available are useful only for wedge grinds.
IFAIK Charlie(Spazola) has a double grinder...

Metal polish is not metal remover good to get rid of pitting deep scratches etc.
